Baked Marinated New Zealand King Salmon photo
Ingredients
80 g Salmon fillet steak butter fried | 5 g Garlic, chopped |
10 g Walnuts toasted, crushed | 30 g Sugar snap peas |
5 g Parsley chopped | 20 g Pea sprout |
2 g Lemon rind | 3 tbsp Vegetable stock |
Blanched leek for tighting | 3 g Black pepper, crushed |
10 g Chiva-som mustard | 5 g Soy sauce |
5 g Onion, chopped | 20 g Tomato concasse |
Cooking Instructions
In a mixing bowl, combine walnuts, chopped parsley, and lemon rind then stuff the salmon. Fasten the salmon with blanched leeks, coat the salmon fillet with mustard and bake for 7-8 minutes or until cooked.
Using a medium heat, put onion, garlic, sugar snap peas, pea sprouts and vegetable stock in a saucepan and stir-fry till fragrant then add tomato concasse. Season with black pepper and soy sauce and continue cooking. After everything is cooked, put on a plate and top with baked salmon.
