How to convert Video CD (VCD) into mp3 or other audio format?

How to convert Video CD (VCD) into mp3 or other audio format? I've a stack of music VCDs which I'd like to be able to listen to on my mp3 player.

I think Handbrake can do this -- have not tried it though.
