GE Freezer Temperature - is this normal behavior?

GE Freezer Temperature - is this normal behavior? I have a french door, bottom freezer GE unit. I recently got back from a vacation to find the freezer door ajar and it not cooling properly. I left the unit unplugged and the freezer door open for several hours. The next morning I started the GE unit back up with a Thermoworks (trusted brand) wireless temp probe inside the freezer with a set temp of 0. After 30 minutes, my thermoworks temp was showing 40-45 degrees while the GE display panel was showing 65 degrees. At one point during the day, the wireless probe was showing 6 degrees and the GE display was showing 40 degrees. It only took a few hours for the actual temperature in the freezer to reach zero. However, it took the GE display almost 7 hours to reflect a temp of zero. Lastly, the actual temperature on my thermometer now fluctuates between -12 and 12 degrees F while the GE display is always showing zero.
