"If an artery is cut, blood will squirt out, instead of oozing.

This is because arteries carry blood away from the heart. Then, since the heart is pumping, there's pressure that pushes the blood. That's why the blood is also pushed out of the cut, quickly squirting out, instead of a slow oozing if a vein is cut.
