Why is my motor water pan overflowing stopping cooling in fridge

What is the model number of the refrigerator?

How did you test the door seals? One way is to place a piece of paper between the door and the door jamb and to try to pull out the paper when the door is closed. It will come out but only with a bit of effort. It shouldn’t come out too easily and it certainly shouldn’t just fall out by itself. Try this test at various places around the doors, top, bottom and both sides.

Have you checked how much ice is building up on the evaporator unit? The evap unit is behind a panel inside the freezer compartment. Access is from the front

Also does the evaporator pan under the refrigerator have a heating element in it at all? I seem to recall in some earlier model fridges (maybe not your make and model perhaps) that the pan has a heater element in it that sped up the evaporation of the meltwater to prevent overflow if it didn’t all evaporate before the next defrost cycle. Can’t see it in the parts list you linked if the pan has this or not. Just a thought on this and maybe worth a check if it has one."

I've rigged a bucket to the drain hose. It seems to produce a pint of liquid daily. I think it overwhelmed the pan on the motor, so the water must have refrozen the flap that sends cold air upto the fridge. Temperature stable 2°c now, just bucket water to deal with!
